Ramzan is
the time where you leave off all the routine life and pleasures to dedicate
yourself to Allah. The month long fast isn’t just about leaving certain form of
food but also includes following rules that purify your thoughts, bring
discipline and make you a better person. This one is indeed one of the toughest
fasting I have known.
And when the
wait is finally over & the sky graces the crescent moon on the #ChaandRaat
the happiness is incomparable. With the offering of prayers for the last time
for the Ramzan – the Eid soon follows bringing a time of meeting with the
closed ones, friends and family, feasting on good food and cherishing the
celebration!
Shahi Tukda a.k.a. Double ka meetha is one of the most popular desserts made during Ramzan. It hails from the streets of Hyderabad! I remember having it during
the Ramzan in Puran Dilli and falling in love with it instantly. The texture of
the fried bread slices melted well with the creamy sweetness that was loaded
with dry fruits and saffron! It is the richness and purity of this dessert that
makes it a beautiful one! And so I tried making it at home time and again!

And this
year I have almost refined the taste even more and reached to a better taste
that matches with the authentic Shahi Tukda. I am sure this one will delight
each one of you! Here is a quick recipe to try!
Ingredients:
4 slices
white bread
3 tbsps Ghee
1 cardamon (crushed)
½ cup condensed
milk
1 cup milk
(Boiled & halved)
1 tsp Rose
water
Almonds,
Cashews, Pistachios (Chopped)
1 tsp
saffron
Method:
1. Boil the
milk in a pan and bring it to a boil. Keep stirring it continuously and let it
turn thick or just dry up half. Add the saffron strands, cardamom and rose water to it.
2. Now add
condensed milk, chopped dry fruits and a little of saffron to it. Let it rest
for 2 minutes.
3. In a skillet
roast the bread slices with dollops of ghee. Let them turn a little crispy
golden brown. Take them off and slice them up.
4. Take a
serving dish and put the first slice of bread. Layer it up with condensed milk
mixture.
5. Now add
another slice of bread and layer it again with the condensed milk mix.
6. Stack all
the bread slices and condensed milk mix together to form a cake like structure.
Top it off with a lot of dry fruits, saffron strands and some more of the
mixture.
7. You can heat
it up a little to eat it warm anytime or just savour the sweet taste in this
room temperature. Your Shahi Tukda is ready! Best served hot!
The
crispiness of the ghee roasted bread slices goes amazingly well with the
creaminess of the thick milk and condensed milk. Try this recipe and enjoy with
your loved ones!
