Chickpea-Cabbage Salad for the bright summer days! #RECIPE #SUMMER


Gourmet salads have an exquisite taste while keeping your nutrition in check! Therefore mixing up just a few ingredients wisely brings about a treat!

And because its summers – the cool vegetables offer a good way to hydrate your body, keep you cooler and provide for the source of fiber in your body. With the help of a little dressing mixed up with the simplest of spices & oil – here is a Chickpea-cabbage salad that has a mild sweetness & spicy structure with a crunch!


As raw salad i have often binged on mashed boiled chickpeas with tomato and onion (Chaat masala, lemon and more dressings) when there was supposed to be Chhole Bhature made at home. But come the use of olive oil i tried to play with the flavours a little. To keep it sugar free i used honey and yes indeed roasting the chickpeas brings about a beautiful flavour!

I love using chickpea in my salads as it’s a rich source of protein, is super soft and yummy while can be infused with any flavor. Therefore this one definitely qualifies for a great salad serving.

Ingredients:

1/2 cup boiled chickpea (boiled and cooled)
1 cup squared cabbage
1 onion chopped
1 tomato chopped
1 tsp Olive Oil

Dressing Ingredients:

2 tbsp Olive oil
1 tsp lemon juice (or white vinegar)
1 tsp honey
1 tsp salt
½ tsp black pepper (powder)
½ tsp cumin (roasted & ground)
4-5 mint leaves (fresh)


Method:

1. Heat a pan and add in 1 tsp olive oil. Mildly heat the oil and add in the dried chickpea to it. Slight roast the chickpea with a little salt and pepper for the flavor! Just a minute of tossing and remove it from the flame. Let it cool.

2. Take a small bowl and mix in all the ingredients of the dressing. Add in a few mint leaves here! Let it rest for 2 minutes.

3. Take a big bowl and add in the cooled chickpea. Now mix in chopped cabbage, tomato and onions. Stir!

4. Mix in the dressing and stir well. Top it off with feta cheese and more mint leaves if desired.

5. You can choose to binge right in or wait for 1 hour to let the dressing marinade the veggies and give a better flavor! Delicious!
