It’s not
very long that I have started loving mushrooms for its oozing flavours. About
of couple of years back I tried on a mushroom sandwich and completely loved the
flavours. At first it was just about that particular sandwich being repeated
again and again as a snack – but slowly the mushrooms in it were given a try in
several other dishes and that is where the love started growing.

the toadstool and a spore bearing fruit is being cultivated largely in India
today because of its medicinal; benefits and the gourmet industry going gaga
over its delicious flavours! I remember it wasn’t available in small times
earlier and all we could do about it was watch at some food channels making
them and just wonder about it. But today its available easily in stores near
us. And therefore are more accessible to be made into delcioous dishes.
I like my
breakfast light and flavourful. Just a small sandwich, a smoothie or sometimes
just a sugar-less pancake to go with my coffee – this mushroom spinach toast
lives by its taste and is so quick to make (specially when I prepare the
stuffing the previous night itself) that you shall completely love it. The raw flavor
of spinach leaves, stir fried mushrooms in olive oil, hints of sprinklers like
oregano, black pepper etc make this toast an absolutely lovable one. Also, I don’t
use the white bread for it – go for the multigrains or brown breads for it and
see the difference!
Here is the
recipe to make this delicious slider!
Ingredients:
8-10 Button
Mushrooms
15 Freshly
cut spinach leaves
10 garlic
pods (Chopped)
1 tbsp Olive
Oil
2 tbsp
oregano
1 tsp black
pepper
1 tsp red chilli flakes
1 tsp red chilli flakes
Salt as per
taste
Grated Cheese
(if required)
Method:
Heat a non
stick pan that is shallow enough to stir fry the veggies. In this put the Olive
oil and start frying the chopped garlic pods until brown. Add the chilli flakes and let the oil turn a little reddish. Now add in the sliced
mushrooms and cook till the colour starts changing to brownish.
Add salt and
black pepper to add flavours.
Add in
spinach leaves while keeping flame on low. Keep stirring veggies every 30
seconds to cook evenly.
Now add
oregano and cheese as and if desired.
After a
minute shut off the flame and cool the mixture.
Apply this
mixture on your bread and make it into a sandwich – delicious it is!
You can
prepare the mix and store it in fridge for about 3 days and use it in the
mornings for times when you are in a rush.
